Visit Durango just kicked off a food waste reduction program, with the goal of creating a model to reduce food waste by 30% produced by our hospitality industry. Working closely with 4CORE and their Waste Reduction Program and Table to Farm to implement composting at restaurants. Visit Durango has onboarding our first restaurant partner, Carver’s Brewing Co. They continue to be a pioneer in environmental protection for the restaurant industry. By implementing KITRO, an advanced food waste tracking system that will help them and other Durango restaurants minimize waste and operate more efficiently. Food waste is a major issue in the restaurant industry, with millions of pounds of food discarded each year. Not only does this contribute to environmental harm—such as increased greenhouse gas emissions and unnecessary resource depletion—but it also impacts the bottom line for businesses, an estimated 7 billion dollars. By bringing Kitro technology to Durango, we aim to change the way our community thinks about food waste and drive meaningful improvements in how we manage it.
KITRO uses AI-powered sensors to track food waste in real-time, providing insights into where waste is occurring and how we can make changes to reduce it. At Carver Brewing Co., this means we’ll have detailed data on what gets thrown away, allowing us to adjust portion sizes, improve inventory management, and ultimately cut down on unnecessary waste.
