Our Prospector restaurant brings bring Italian flare to the Rocky Mountains in a fine dining setting. We designed the flavors to connect our local game and produce with some rustic yet classic Italian additions. We are also highlighting our rotisserie ovens with prime rib and chicken served fresh daily. Along with our brick pizza oven and delicious salads there is something for everyone. The environment is rustic chic and offers an amazing outdoor patio with 360 degree views of the Hermosa Cliffs.
